Caramelized Peach Brown Betty

Brown Betty; think fresh peaches caramelized in a cast iron skillet with crispy crunchy yumminess on top and it's so easy to make. This is my new favorite dessert!!! Adapted from Mels Kitchen Cafe.

Topping Ingredients:

4 slices of bread

6 Tbsp butter, cold and cut into Tbsp size slices

1 Tbsp sugar

½ tsp cinnamon

Peach Filling:

2 Tbsp butter

4-6 medium peaches, pitted and sliced in ½ inch slices

⅓ cup sugar

⅓ cup brown sugar

1 Tbsp lemon juice

1 tsp vanilla

⅛ tsp salt

Pineapple Scented Whipped Cream:

1 cup heavy cream

2 Tbsp brown sugar

½ tsp vanilla

1 Tbsp pineapple (or favorite) liqueur (I used Patron), optional

Preheat oven to 400*. Place bread and butter in a food processor and pulse till coarsely ground. Mix cinnamon and sugar together in a small bowl. Set topping ingredients aside.

In a large cast iron or heavy bottomed skillet cook butter and peach slices until they just begin to caramelize and are softened; about 8-10 minutes. Turn heat off and add 1 cup of the bread crumb mixture along with the sugars, lemon juice, vanilla & salt (this will smell heavenly by the way). Top with the remaining bread crumbs and cinnamon sugar mixture. Bake until golden brown, carmely and bubbly; about 20 minutes. 

Whip the cream in a mixer while adding brown sugar, vanilla and liqueur (if using) till it has soft peaks when the beaters are raised. Serve warm with whipped cream.
