Cheesy Garlic Breadsticks

Delicious garlic and cheese breadsticks are soft and cheesy. Inspired by Sally McKenney of Sally’s Baking Addiction https://sallysbakingaddiction.com/cheesy-garlic-breadsticks/ 

1 ⅓ cups warm water

2 ¼ tsp yeast

1 Tbsp sugar

3 ½ cups flour

¾ tsp salt

2 Tbsp olive oil

Topping:

¼ cup butter, melted

3 Tbsp garlic, minced

½ cup parmesan cheese, grated

1 cup mozzarella cheese, shredded (or cheddar)

In a stand mixer, combine water, yeast and sugar. Let stand until foamy, about 5 minutes. Add in the flour, salt and olive oil. Mix together with the dough attachment for 3 minutes on medium speed. Scrape the sides of the bowl and cover with plastic wrap. Let rise for an hour, the dough will be doubled in size. 

Preheat oven to 375*. Scrape dough onto a lightly floured rolling surface. Cut the dough in half and roll each ball of dough into a 7 x 10 inch rectangle (or place one of the balls of dough in a plastic bag and refrigerate for about 4 days or freeze for up to 2 months. Place rectangle on a silpat or sheet of parchment. Brush dough with the melted butter and sprinkle garlic and cheeses on top. Cut into breadsticks 1 ½ “ wide with a pizza roller. Place parchment or silpat on a baking sheet. Bake for 16-20 minutes or until golden brown.
