Foothills Sourdough Garlic Knots

4 cups flour

1 Tbsp sugar

2 tsp salt 

1 ½ cups water 

½ cup sourdough starter

2 Tbsp olive oil

Garlic Butter:

½ cup butter, melted

¼ cup parsley, chopped fine

7 cloves garlic, minced 

2 green onions, chopped fine

¼ tsp salt 


Mix flour, sugar, salt, water, starter, and oil in a stand mixer for about 5 minutes on medium-low speed (or by hand in a large bowl until it is smooth and elastic). Cover with a lid or plastic wrap overnight. 


In the morning or when ready to bake, preheat the oven to 375*. Mix the garlic butter ingredients in a small bowl and set to one side. Roll the dough into a rectangle on a lightly floured rolling surface. Spread half of the garlic butter over the rectangle. Slice the dough into 12 strips with a pizza roller on the short edge of the rectangle. Form the strips into a knot and place on a baking sheet. Bake for 12-15 minutes; the dough may be pale, but the garlic should have a touch of golden color. Check with an insta-thermometer that the knots are a minimum of 190*. Serve drizzled with the remaining garlic butter.
