Parmesan Green Onion Brioche Buns

Tender rolls with a wonderful parmesan cheese and green onion flavor baked right in. These are terrific as mahi mahi burger rolls. Inspired by Erin Clarkson at Cloudy Kitchen https://cloudykitchen.com/blog/cheese-spring-onion-and-chive-brioche-buns/
1 cup milk, lukewarm
1 Tbsp yeast
2 Tbsp sugar
3 ½ cups flour
1 tsp salt
2 eggs
6 Tbsp butter, softened
3 Tbsp green onions, sliced
¼ cup parmesan cheese, grated
In a stand mixing bowl layer the milk, yeast, sugar, flour, salt, eggs, butter, green onions and parmesan cheese. With the paddle attachment, mix on medium speed for 2 minutes. Scrape down the dough and cover the bowl with plastic wrap. Allow to rise in a warm draft-free area for an hour or until the dough has nearly doubled in size.
Preheat the oven to 375*. Scrape the dough out onto a lightly floured rolling surface. Divide dough into 9 equal portions, or roll dough into a circle and cut with a round biscuit cutter or heavy glass. Place on a parchment or silpat lined baking sheet. Allow to rise for about 30 minutes. Bake until golden, about 15 minutes and pull out of the oven, brush with melted butter and allow to cool. I like to test for doneness with an instant thermometer, breads should read a minimum of 190*.
