Potato Parmesan Sandwich Rolls

Tender potato rolls with parmesan cheese, topped with everything bagel seasoning are the perfect match for your favorite sandwich or burger. I love large hamburger buns and often cut the dough into oversized rounds with a margarita glass. Inspired by Tara @ Smells Like Home https://www.smells-like-home.com/2017/05/potato-burger-buns/ 

1 lb russet potatoes, peeled and cubed

⅔ cup potato water, reserved + 1 Tbsp

5-5 ½ cups flour

1 Tbsp sugar

1 Tbsp yeast

½ cup parmesan cheese, grated + more for topping

¼ cup butter, softened

2 tsp salt + ¼ tsp 

3 eggs + 1 for egg wash

Sesame bagel seasoning, a sprinkling for topping

Cook potato cubes and ¼ tsp of salt in a saucepan covered with water for about 9 minutes or until tender. Reserve ⅔ cup of water (+ 1 tablespoon) in a liquid measurer to cool. Drain the potatoes and allow them to cool. Whip the potatoes in a stand mixer with the paddle attachment until fluffy and lump free. 

Whisk 1 egg with 1 tablespoon of reserved potato water in a small bowl and set to one side.

Add 5 cups flour, sugar, yeast, parmesan cheese, butter, 2 tsp salt, 3 eggs, and ⅔ cup of potato water on top of the potatoes. Mix on medium-high speed for 4-5 minutes adding up to half a cup more flour as needed, mixing until the dough begins to get stretchy, it will be a soft somewhat sticky dough.

Scrape the sides of the bowl down with a rubber scraper and cover with plastic wrap. Allow the dough to rise in a warm draft-free place for about 1 hour.

Scrape the dough out onto a rolling surface lightly dusted with flour. Either cut the dough into 10 equal pieces and form into rolls, or roll the dough into a thick rectangle and cut with a large glass (I use a margarita glass for over-sized rolls) forming the last couple by hand. Place formed rolls on a parchment or silpat-lined baking sheet and allow to rise for 30 minutes. Preheat the oven to 350*. Brush the rolls with the egg wash and sprinkle with the sesame bagel seasoning and a sprinkle of parmesan cheese. When done rising, bake for about 16 minutes until beautifully golden brown on top. Bread is fully baked when tested with an insta-thermometer at a minimum of 190*and up to 200*. Allow the rolls to cool before slicing.
