Quick Sourdough Dinner Rolls

A quick and delicious enriched sourdough dinner roll that is great split and toasted for breakfast too. These tasty rolls can be made from start to finish on the same day. Inspired by Emily @ Country Roads Sourdough. https://countryroadssourdough.com/same-day-sourdough-dinner-rolls/
4 cups flour
¼ cup sugar
1 tsp salt
1 ¼ cups milk, warmed
1 cup sourdough starter
¼ cup butter, softened
1 egg
Egg Wash:
1 egg
1 Tbsp water
Butter, for brushing after baking
Flaky sea salt, for sprinkling after baking
Mix all ingredients in a stand mixer on medium speed with the dough hook for 15 minutes. Transfer the dough to a non-metallic bowl and cover with plastic wrap. Place in a warm place for 5 hours. I put mine on my range under a warm lamp. You could put it in the oven with the light on.
When the dough has doubled in size, pull it onto a lightly floured surface on the counter and divide into 15 equal rolls. Place the rolls in a 9.13 pan that has been buttered or spray-oiled. Cover with plastic wrap and allow to rise in that magic warm spot for 2-3 hours or until they have risen and are puffy.
Preheat the oven to 350*. Brush the rolls with egg wash just before baking. Bake 25-30 minutes, they will be golden and a minimum temperature of 190*. Brush with butter while still warm and sprinkle with flaky sea salt.
