Sourdough Bagels

Delicious chewy sourdough bagels are even better homemade. Add your favorite toppings after boiling or keep them plain. Try mixing in craisins and cinnamon, dried blueberries, or your favorite flavor during the mixing process if you like. 4 cups flour 

2 Tablespoons sugar 

1 Tablespoon salt 

1 cup water + 1 Tablespoon as needed 

½ cup sourdough starter 

Boil Bath:

6 cups water 

1 Tablespoon sugar 

Everything but the bagel seasoning, sesame seeds, etc

Mix flour, sugar, salt, water, and starter with a dough hook until smooth, about 5 minutes. Cover with plastic wrap and allow the dough to rise overnight. 

The next morning, scrape the dough onto a lightly floured surface, and divide into 9 equal portions. Roll into a circle, then poke a hone in the center with your thumb. Allow to rise for 30-60 minutes. Preheat the oven to 425*. Bring water and sugar to a boil in a large skillet for the bath. Boil about 4-5 at a time for 2 minutes per side. Place onto a parchment or silpat lined baking sheet and sprinkle with everything but the bagel seasoning or other desired topping, or keep them plain. Bake for 25-28 minutes, or until golden brown.
