Sourdough Banana Bread

Sourdough with banana makes a lovely slightly tangy mild banana-flavored toast. Great buttered with cinnamon sugar and a cup of wake-up.
4 cups flour
½ cup sugar
¾ cup water
2 bananas
2 tsp salt
1 Tbsp sugar
1 tsp cinnamon or pumpkin spice, optional
In a stand mixer, layer flour, starter, water, bananas, salt, sugar, and spice, if using. Mix on medium speed for about 3 minutes. Shape into a ball and place in a non-metallic, glass, or plastic bowl and cover with a lid or plastic wrap. Leave on the counter overnight.
In the morning, preheat the oven to 450* with a dutch oven on a rack. Remove the dough from the bowl and turn out onto a sheet of parchment. Slash the top with a lame or sharp knife, dusting with a bit of flour. When preheated, place the loaf with parchment into the dutch oven and place the lid on top. Bake for 25 minutes covered, then remove the cover and bake for an additional 25 minutes. Allow to cool before slicing, toasting, and devouring.
