Sourdough Orange Chocolate Frangipane Rolls

4 cups flour
2 Tbsp sugar
1 tsp salt
½ cup butter, softened
¾ cup milk
½ cup sourdough starter
2 eggs
Orange Frangipane Filling:
½ cup butter, softened
½ cup sugar
1 orange, zested
1 cup almond flour
2 Tbsp flour
¼ tsp salt
2 eggs
1 tsp vanilla
½ tsp almond extract
1 cup dark chocolate chips
In a stand mixer using a paddle attachment, blend flour, sugar, salt, and butter until combined. Add milk, sourdough starter, and eggs. Mix on moderate speed for 5 minutes. Scrape the dough into a non-metallic bowl and cover with a lid or plastic wrap on the counter overnight; the dough will have doubled.
Whip butter and sugar until light and fluffy, add orange zest, flour, salt, eggs, vanilla, and almond extract. Mix to combine.
Lightly spray oil a 9.13-inch Baking dish, set aside. Punch down the dough and scrape onto a lightly floured rolling surface. Dust with a bit of flour and roll the dough into a rectangle about 12.19. Spread the frangipane mixture onto the rectangle of dough and sprinkle with the chocolate chips, roll up along the long edge. Using a bench scraper, cut the dough into 12 equal pieces and set into the prepared baking dish. Allow to rise for an hour covered with plastic wrap. Preheat the oven to 375* and bake for 20-24 minutes. Use an insta-thermometer to test that the rolls are a minimum of 190*.
