Apple Ricotta Fritters

Apple Saute:
1 granny smith apple, diced
2 Tbsp butter
2 Tbsp brown sugar
1 tsp cinnamon
Salt, a pinch
1 lemon, zest of
2 tsp flour
Saute the apples with the butter, brown sugar, cinnamon, salt, and lemon zest until the apples are softened. Add the flour stirring to thicken off heat, and allow the mixture to cool.
Batter:
2 eggs
1 ⅓ cups flour
1 Tbsp baking powder
Salt, pinch of
¼ cup sugar
1 cup ricotta cheese
1 tsp vanilla
Vegetable or peanut oil, for frying
Add oil to a large frying pan or electric skillet, bring oil up to 375*. Prepare a rimmed baking sheet with paper towels for draining the cooked fritters. In a mixer, beat eggs until foamy. Add all dry ingredients and mix together on slow speed, stir in the ricotta, vanilla, and apple saute by hand until just folded together, the batter will be thick like a waffle batter. Drop several tablespoonfuls of batter into the hot oil, turning occasionally for even browning, about 3 minutes. Remove with a slotted spoon to the baking sheet and dust with cinnamon sugar. Serve warm with maple syrup.
Cinnamon Sugar:
½ cup sugar
1 Tbsp cinnamon
Shake together and sprinkle over hot fritters fresh out of the fryer. Store in a spice shaker.
