Meli’s Perfect Avo-Egg Toast

Perfectly steam-set eggs over avocado and wheat toast is a great way to fuel your beautiful day. This is my Meli’s favorite breakfast. Don’t forget the coffee!!!
2 slices wheat bread (Dave's Killer Bread is a fav)
½ an avocado, sliced
Everything but the bagel seasoning, a sprinkle (I get from Trader Joes)
2 eggs
Olive oil spray
Salt and pepper, to taste
2 Tbsp water
Toast the bread and spread with avocado slices, mash a bit with a fork and sprinkle with the everything seasoning. Preheat the skillet and spray with a bit of olive oil. Crack eggs into skillet and salt and pepper them. Cook for about 1 minute over medium heat, the bottom will be set. Add the water and top with a lid to steam-set the top of the eggs to your desired taste. I take my egg out as soon as the white is cooked and the yolk is set but still wobbly, Meli likes hers a bit more set, maybe a minute more.
