Banana Bread Snack Cake

2 cups granulated white sugar
1 cup butter, softened
3 cups mashed ripe bananas (about 6)
4 large eggs
1Tbsp vanilla
2 ½ cups cake flour
2 teaspoons baking soda
1 teaspoon salt
Spray oil and cinnamon sugar, for baking dish
Preheat to 350*. Spray oil a 9x13 baking dish and sprinkle with cinnamon sugar. Cream the sugar and butter together in a stand mixer until fluffy. Layer bananas, eggs and vanilla into the mixer and stir until well mixed. Sift cake flour, baking soda and salt into the mixer and fold in by hand with a rubber scraper until just incorporated. Bake for 35-45 minutes or until a toothpick inserted comes out clean of crumbs or batter.
