Banana Cinnamon Rolls

Got Bananas; have we got a treat for you! Ooey gooey self making butterscotch sauce enrobing banana cinnamon rolls with melty chocolate chunks inside. This is a great day! Dough may be made the day before to the point of the second proof and stored in the fridge in the 9.13 pans overnight so they can be baked fresh for breakfast. They will probably need to come to room temperature before putting in the oven if they did not rise much overnight.  Sometimes moist enriched doughs take a little longer to prove.

Dough

3 bananas

6 cups flour

1 Tbsp. yeast

¾ cup sugar

2 tsp. salt

1 cup (2 sticks) butter, melted

2 eggs

1 Tbsp. vanilla

2-4 Tbsp. milk

In a stand mixer, layer bananas, flour, yeast, sugar, salt, butter, eggs & vanilla. Mix while adding just enough milk to make a sticky dough.  Mix for about 4 minutes until the dough is a bit elastic and pulling away from the bowl. Allow to rise in the bowl covered with plastic wrap, in a warm draft free place for 1 hour or until the dough has risen substantially. 

Butterscotch Cream

½ cup brown sugar

½ cup butter, melted

½ cup heavy whipping cream

Prepare 2 9.13 dishes with ¼ cup brown sugar, ¼ cup melted butter and ¼ cup heavy cream each and mix well.

Cinnamon Filling

1 cup butter, softened

1 cup sugar

2 Tbsp. cinnamon

1 cup dark or semi sweet chocolate chips

Mix together the sugar and cinnamon. Divide dough in half and roll out into a rectangle on a floured surface. Spread a thick, even layer of butter over the dough, sprinkle a generous layer of cinnamon sugar on top and sprinkle the dough with about ½ of the chocolate chips. Roll up dough and cut into 12 rolls and lay in the prepared pan . Repeat with the remaining dough and place in the following pan.

Cover dishes with plastic wrap and place in a warm draft free place for about an hour.  When dough has proofed preheat oven to 375*.  Bake for about 25 minutes.  Rolls should be a very light brown.  You can check to make sure they are done by inserting a thermometer in the middle and registering between 190-200 degrees F.
