Banana Oat Chocolate Chip Energy Bites

Banana, oatmeal, peanut butter, and chocolate chips make up these nubbly little breakfast (or anytime) bites. Perfect with a cup of wake-up for when your on the go. Sometimes I’ve seen these formed or rolled into perfect balls, mine get crumbly so I mold them into a reused dumpling container or ice cube mold. Might be good with coconut and craisins too. 2 cups rolled oats

1 very ripe banana

½ cup peanut butter or almond butter

¼ cup ground flax seeds

¼ cup mini chocolate chips

1 Tbsp chia seeds

1 tsp vanilla

½ tsp cinnamon

1 Tbsp honey, optional

Layer ingredients in order in a stand mixing bowl and cream until the dough comes together, and is incorporated. Scoop dough by tablespoonfuls and press into a small mold such as a dumpling tray, ice cube tray, or mini muffin tin. Refrigerate covered with plastic wrap for at least 30 minutes. Unmold and store in the fridge in a ziplock bag.
