Banana Streusel Breakfast Cake

½ cup butter, softened
1 cup brown sugar
3 bananas, ripe
2 eggs
1 Tbsp vanilla
¼ cup sour cream
1 ½ cups flour
½ tsp salt
2 tsp baking powder
Streusel Topping:
½ cup butter, softened
1 cup flour
1 cup brown sugar
1 tsp cinnamon
Preheat oven to 350*. Spray oil a 9x13 baking dish and sprinkle with a bit of cinnamon and sugar mix. In a stand mixer cream butter and brown sugar together. When creamed and fluffy add in the bananas, vanilla and sour cream. Mix until combined. Sift flour, salt and baking powder on top and mix just until the dough comes together, being careful not to overmix. Pour into the prepared baking dish (it may look shallow but will puff into a nice sized cake) and make the streusel.
Layer the butter, flour, brown sugar and cinnamon together in the mixing bowl. Turn on until the ingredients are mixed and a bit fluffed; it may look a bit like bread crumbs. Pour over the cake dough. Bake breakfast cake for 35-40 minutes or until a toothpick tester comes out with no crumbs.
