Prep Time: 15 mins | Cook Time: 20 mins | Course: Breakfast | Servings: 12
Banana walnut scones with warm spices are drizzled with a vanilla honey butter glaze, and have a tender yet cakey scone consistency. These scones are dropped by generous ¼ cup scoops and are easy to make. The vanilla honey glaze drizzled over warm scones is delightful. 2 ½ cups flour
½ tsp salt
2 ½ tsp baking powder
1 Tbsp cinnamon
½ tsp nutmeg, fresh ground is best
¼ tsp allspice
¼ tsp cloves
5 Tbsp butter, cold, sliced into tablespoons
1 cup walnuts
2 medium bananas
½ cup brown sugar
⅓ cup greek yogurt
1 egg
1 tsp vanilla
2 Tbsp raw or turbinado sugar, for sprinkling
Vanilla Honey Butter Glaze:
¼ cup honey
3 Tbsp butter
½ cup powdered sugar
½ tsp vanilla bean paste
Preheat oven to 400*. In a food processor, layer flour, salt, baking powder, cinnamon, nutmeg, allspice and cloves. Quick pulse to combine. Add in butter by slices and scatter around the bowl. Pulse 10 times, until butter is well blended in. Add in walnuts and give about 5 quick pulses to lightly chop. Slice bananas over mixture, add brown sugar, yogurt, egg and vanilla. Pulse a few times to distribute the mixture, being careful not to over-mix. Transfer to a mixing bowl and fold in any unincorporated flour mixture with a rubber scraper to combine, a few banana bits are fine. Drop by generous ¼ cup scoops onto a silpat or parchment lined baking sheet. Sprinkle with turbinado sugar and bake for 18-22 minutes. Scones will be nicely browned and a toothpick tester may come out with loose crumbs.
Warm honey and butter in a glass measurer, whisk in the powdered sugar and vanilla bean paste. Drizzle over warm scones and serve. Glaze and leftover scones can be warmed in the microwave for a quick breakfast or snack.
