Brown Sugar Banana Bread Snack Cake

5 medium bananas
¾ cup brown sugar, packed
⅓ cup butter, melted
1 egg
1 tsp vanilla
1 ½ cups flour
1 tsp baking soda
½ tsp salt
1 tsp cinnamon
½ tsp nutmeg, freshly ground is best
Preheat oven to 350* and spray oil a 8” square pan, sprinkle with some cinnamon sugar and set aside. In a stand mixing bowl with paddle attachment, beat bananas with brown sugar. Scrape down sides of the bowl and add in the butter, egg and vanilla. Stir in flour, baking soda, salt, cinnamon and nutmeg until just incorporated (over-mixing can make baked goods tough). Pour batter into the pan and smooth with a rubber scraper. Bake for 35-45 minutes or until a toothpick test comes out clean of batter.
