Brown Sugar Banana Bread with Salted Caramel

Brown sugar banana bread has a wonderful texture and the salted caramel glaze cooks for 9 minutes in the microwave. Inspired by Rachel Heather Henderson & Allrecipes https://www.allrecipes.com/recipe/236474/salted-caramel-banana-bread/ 

1 cup brown sugar

½ cup butter, softened

2 eggs

4 bananas

1 Tbsp vanilla

2 cups flour

1 Tbsp baking powder

½ tsp salt


Salted Caramel Glaze:

½ cup brown sugar

1 cup heavy cream

¼ tsp salt

2 Tbsp butter

1 tsp vanilla


Preheat the oven to 350*. Spray oil in a bread pan and set to one side. In a stand mixer, beat brown sugar and butter together until fluffy, about 3-5 minutes. Add in the eggs, bananas, and vanilla. Mix until well incorporated. Sift the flour, baking powder, and salt over the batter. Mix until just combined, scrape down the bowl with a rubber scraper, and pour the batter into the prepared bread pan. Bake for 55-60 minutes or until a toothpick test comes out dry. I love to use an insta-thermometer, it should read 200-205* when done. 

Measure brown sugar, cream, salt, and butter into an 8-cup pyrex measurer or other large microwave-safe mixing bowl. Microwave for 3 minutes and stir, repeat two more times in 3-minute increments for a total of 9 minutes. Stir and add vanilla. Allow to cool. Drizzle a generous amount over the banana bread and store any leftover caramel in a small mason jar in the fridge.
