Chili Egg Puff

Easy and delicious cheesy puffed eggs are high in protein and a great breakfast bake for a crowd. We called them square eggs when the girls were in elementary school.

12 eggs

½ cup flour

1 tsp baking powder

2 cups cottage cheese

½ cup mozzarella or jack cheese

½ cup cheddar cheese

¼ cup butter, melted + 1 Tbsp more for the pan

2 green onions, chopped

1 4-oz can green chilies

1 tsp onion seasoning or garlic salt

½ tsp pepper 

Whisk eggs, flour, and baking powder in a large mixing bowl. Add cottage cheese, cheeses, and melted butter in a mixing bowl and stir in the eggs. Stir in green onions, green chilies, and seasonings. Brush melted butter into a 9.13 baking pan and spread egg mixture evenly. Bake until golden, firm and puffed, 30-35 minutes.
