Oat Sticks with Syrupy Berries

These oat sticks are a marriage of overnight oats and French toast. Top with maple sautéed berries for a healthy and delicious breakfast. Inspired by Elizabeth Stein in her Eating Purely cookbook.
1 cup oatmeal ( or multigrain oats)
3 Tbsp coconut
3 Tbsp craisins
3 Tbsp pecans, roughly chopped
¼ tsp cinnamon
¼ tsp salt
⅔ cup water
2 Tbsp coconut oil
½ cup assorted fresh berries
Maple syrup, a drizzle
Line a 6 1/2 x 4 1/2 baking dish ( or a bread pan) with parchment paper. In a large bowl, whisk oats, coconut, raisins, pecans, cinnamon, and salt together. Drizzle water over and mix. Spread into the lined baking dish and place in the fridge overnight. In the morning, remove the dish and using the parchment remove the oat slab onto a cutting board and slice into sticks. Preheat coconut oil in a large skillet and fry sticks a couple of minutes on each side until golden brown. Remove the oat sticks onto plates, then add the berries and a drizzle of maple syrup into the skillet, stir until heated through and spoon over the oat sticks.
