Peach Crumble Muffins

Tender peach and cinnamon muffins with a lovely brown sugar, walnut, buttery streusel topping. It has peaches throughout the muffins; even the streusel. Sink your teeth into a crunchy bite of streusel leading into the delicate muffin interior packed with a Summer peach flavor. 2 cups flour
1 Tbsp baking powder
1 tsp cinnamon
½ tsp salt
2 eggs
1 cup sugar
1 cup Greek yogurt
½ cup olive oil
1 tsp vanilla
2 ½ cups peaches, diced (divided)
Streusel Topping:
1 cup flour
½ cup walnuts
½ cup brown sugar
1 Tbsp cinnamon
½ cup butter
Preheat the oven to 375*. Spray oil or butter 2 muffin tins (using liners if you like) and set to one side. In a mixing bowl, whisk flour, baking powder, cinnamon, and salt together. Set to one side. In another mixing bowl, whisk eggs, sugar, yogurt, oil, and vanilla. Add 1 ½ diced peaches to the flour mixture and stir, then add the dry mix to the egg mixture and stir just until flour is incorporated.
Layer flour, walnuts, brown sugar, cinnamon, and butter in a food processor. Pulse until mixed together. Stir the remaining diced peach into the streusel.
Drop batter into the prepared muffin tins to about the ⅔ full mark. Top with a generous tablespoon of the peach streusel. Bake 16-20 minutes or until a toothpick inserted comes out batter free. If testing with an insta-thermometer the minimum temperature should read 200*.
