Peanut Butter Banana Baked Oats

Creamy baked oats with peanut butter, banana and cinnamon (and I’ve added coconut) is a healthy breakfast treat. Always inspired by Diane Morrisey, she loves breakfast and has the most amazing reels on instagram!!!


2 bananas

⅔ cup peanut butter

¼ cup brown sugar

¼ tsp salt

1 tsp cinnamon

1 tsp baking powder

1 egg

1cup milk

1 tsp vanilla

2 ½ cups old fashioned oats

1 cup coconut flakes, optional

Preheat oven to 350*. In a stand mixer, mash bananas, peanut butter, brown sugar, salt, cinnamon and baking powder together. Add the egg, milk, vanilla, oats and coconut, if using. Mix until incorporated. Spray oil a 9” square pan or approximate equivalent. Bake for 25 minutes till set.
