Plum Clove Bread

½ cup butter, softened

1 cup sugar

2 eggs

1 tsp vanilla

1 ½ cups flour + 1 Tbsp

½ tsp baking soda

½ tsp salt

½ tsp cloves

1 cup plums, pitted and diced

⅓ cup plain yogurt

2 Tbsp turbinado sugar

Preheat oven to 350*. Butter or spray oil a bread pan and set to one side. In a stand mixer, cream butter and sugar together about 2 minutes, until fluffy. Add eggs, and vanilla and mix until incorporated. Scrape the sides of the bowl down. In a medium mixing bowl, whisk 1 ½ cups flour, baking soda, salt, and cloves together. Pour over the batter, add plums and sprinkle with the remaining tablespoon of flour, then top with the yogurt. Mix together until just mixed and spread batter into the prepared bread pan. Sprinkle the top with turbinado sugar and bake for 50-60 minutes or until golden-brown and a toothpick tester comes out batter-free. I like using an insta-thermometer, the bread should read a minimum of 200*.
