Pumpkin Spice Chocolate Chip Muffins

Tender and moist pumpkin and spice with chocolate chips and everything nice muffins to make your morning. Inspired by Julie at Table for Two https://www.tablefortwoblog.com/pumpkin-spice-chocolate-chunk-muffins/ 

1 ⅔ cups flour

1 cup sugar

1 Tbsp pumpkin pie spice

1 tsp baking soda

¼ tsp baking powder

¼ tsp salt

2 eggs

1 tsp vanilla

1 cup pumpkin puree

½ cup butter, melted

6 oz chocolate chips

Preheat oven to 350*. In a mixing bowl, whisk the flour, sugar, pumpkin spice, baking soda, baking powder and salt together. Add in the eggs, vanilla, pumpkin, butter and chocolate chips. Stir until just incorporated. Prepare a muffin tin with liners and a spray of olive oil. Scoop the batter evenly amongst the liners, about ¾ of the way full. I got 14 amazing muffins. Bake for 20-25 minutes or until a toothpick tester inserted in the middle of the muffin comes out clean.
