Skillet Cardamom Strawberry Pancake

Cardamom and butter scented puffy oven strawberry pancake with a dusting of powdered sugar will get your day off to a delightful start. Inspired by Rita at allrecipes https://www.allrecipes.com/recipe/214433/skillet-strawberry-pancake/  



3 eggs

¼ tsp salt

½ tsp cardamom

½ cup flour

¾ cup milk

½ tsp vanilla

2 Tbsp butter

1 cup strawberries, rinsed, hulled and sliced

Powdered sugar, a dusting

Preheat oven to 425*. Crack eggs into a blender and layer salt, cardamom, flour, milk and vanilla on top. Blend until smooth. Fold with a rubber scraper any flour that clings to the side after blender is turned off. Melt the butter in a 8” cast iron or oven proof skillet over medium heat. Pour in the batter and top with the strawberries. Place in the oven and bake until puffy and golden, 20-25 minutes. Remove from the oven and serve with a dusting of powdered sugar.
