Strawberry Balsamic Rosemary Shrub

Strawberry and rosemary balsamic shrub drink mix. This is a delicious mix to have on hand for a quick fruity bubbly drink. Just add club soda and ice, or with prosecco or as a cocktail. 1 cup sugar
1 cup water
2 cups strawberries, hulled
1 rosemary sprig
1 Tbsp balsamic vinegar
15 Tbsp apple cider vinegar
In a medium sized saucepan, melt sugar and water together over medium low heat. Stir in strawberries and rosemary; cook for about 10 minutes, the berries will begin to lose their color, soften and become fragrant. Take off the heat, measure the balsamic vinegar into a one cup glass measurer. Fill the rest of the way to the one cup mark with apple cider vinegar. Stir into the saucepan. Pour into a blender (removing the rosemary) and puree. Strain with a fine sieve to remove the seeds, then allow to chill in the refrigerator. Will keep for several weeks in the fridge. Serve with ice and club soda or in a flute with prosecco or your favorite bubbly or as a cocktail, suggested below.
1-2 shots strawberry shrub mix
1 shot vodka, gin or other favorite alcohol
Ice
Club soda
In an old fashioned cocktail glass, add the shrub and vodka (or other) over ice. Top off with club soda and stir.
