Apple Cider Caramel Cookies

Apple cider flavored cookies with a lovely caramel inside then rolled in more hot apple cider powder. I used 9 out of 10 of the envelopes of cider that come in the box. You could use a different caramel, but if you can find these Bequet caramels, they are amazing. 1 cup butter, softened

¾ cup sugar

¾ cup brown sugar

2 eggs

1 tsp vanilla

3 cups flour

1 (7.4 oz) box spiced apple cider instant drink mix

1 tsp baking soda

½ tsp baking powder

1 tsp cinnamon

½ tsp nutmeg, freshly grated is best

½ tsp salt

1 17 oz bag of Bequet celtic sea salt caramels


Preheat oven to 350*. In a stand mixer, beat the butter with the sugar, and brown sugar. Scrape down the sides of the bowl and mix in the eggs, and vanilla. In a mixing bowl, whisk the flour, 7 of the envelopes of apple cider, baking soda, baking powder, cinnamon, nutmeg, and salt. Add the dry mix into the batter and mix until just incorporated. 

Unwrap and slice caramels in half and place them in a bowl. In another bowl, pour in 2 more envelopes of the cider mix. Using about 1 tablespoon of dough, poke a caramel piece in the center of each dough ball, then roll into the apple cider mix. Place dough balls on a parchment or silpat lined baking sheet. Bake for 9-10 minutes.
