Banana Bread Cookies

1 banana

1 ½ cups brown sugar

½ cup butter, softened

2 eggs

⅓ cup olive or vegetable oil

1 Tbsp vanilla

2 cups flour

1 tsp baking soda

1 tsp baking powder

1 ½ tsp salt

1 tsp cinnamon

½ tsp nutmeg

½ tsp cloves 

1 cup oats

12 oz dark chocolate chips

1 cup almonds (or favorite nuts), chopped

Preheat oven to 350*. Line 2 baking sheets with parchment or a silpat. In a mixing bowl beat the banana, brown sugar and butter until combined and fluffy. Add in the eggs, oil and vanilla mixing again until combined. Whisk the flour, baking soda, baking powder, salt, cinnamon, nutmeg and cloves in a medium bowl to combine and pour into the mixer adding in the oats, chocolate chips and almonds or nuts of your choice. Mix to incorporate and then drop onto baking sheets in teaspoonfuls. Bake for 12 minutes. Let cool before transferring cookies to a baking rack.
