Banana Chocolate Chip Almond Flour Cookies

These healthy little gems are delicious with banana, peanut butter, cocoa or cacao powder, dark chocolate chips and cinnamon. Inspired by Jill at Simply Jillicious https://www.simplyjillicious.com/banana-bread-cookies/
1 ⅓ cups almond flour
½ tsp baking soda
½ tsp salt
1 tsp cinnamon
2 Tbsp unsweetened cocoa or cacao powder
2 Tbsp coffee granules or 2 tsp espresso powder, optional
2 Tbsp peanut flour, optional (found at Trader Joes)
5 bananas, mashed
2 Tbsp maple syrup
¾ cup peanut butter
6 oz dark chocolate chips
Preheat the oven to 350*. Whisk almond flour, baking soda, salt, cinnamon, cocoa powder, coffee powder and peanut powder together in a mixing bowl. Mix the bananas, maple syrup, peanut butter and chocolate chips into the bowl and stir together. Drop with a tablespoon-size cookie scoop or tablespoonfuls on a cookie sheet, flatten a bit and bake for about 24 minutes.
