Summer mixed berries with a puff pastry crust in this unusual upside-down pie. This is an easy-to-make recipe that comes together fast.
6 cups mixed berries, raspberries, strawberries, blueberries, etc.
¼ cup brown sugar
¼ cup cornstarch
1 tsp cinnamon
salt, a pinch
1 lemon, zested and juiced
1 Tbsp Chambord or other berry liqueur, optional
1 sheet puff pastry
1 egg white
1 Tbsp sugar
Preheat oven to 375*. Butter or spray oil a 9-inch pie plate. Mix berries in a large bowl with brown sugar, cornstarch, cinnamon, salt, lemon zest, lemon juice, and Chambord, if using. Spread evenly into the prepared pie plate. Top with the puff pastry sheet, tucking the edges under. Brush egg white on top of the puff pastry with a pastry brush and sprinkle with sugar. Bake for 35 to 40 minutes. The top of the puff pastry will be brown and puffy, and the berries will be bubbly.
