Black Magic Cupcakes

Black magic cake is the very best chocolate cake, and these are the very best chocolate cupcakes. Frost with this amazing chocolate cream cheese frosting for smiles all around.

1 ¾ cups flour

2 cups sugar

¾ cup cocoa powder

2 tsp baking soda

1 tsp baking powder

1 tsp salt

2 eggs

1 cup strong coffee (or 1 cup water with 1 Tbsp instant espresso powder or 3 Tbsp instant coffee)

1 cup buttermilk (or 1 cup milk with 1 Tbsp vinegar or lemon juice)

½ cup olive oil 

1 tsp vanilla

Spray oil

Chocolate Cream Cheese Frosting 

8 oz cream cheese, softened 

½ cup butter, softened 

½ cup cocoa powder 

2 cups powdered sugar 

1 Tbsp vanilla 

½ cup sour cream 


Preheat oven to 350*  Spray oil a muffin pan filled with cupcake liners.  Whisk dry ingredients together in a mixing bowl. Whisk eggs, coffee, buttermilk, oil, and vanilla together and pour into the dry ingredients. Mix the batter together until just incorporated (batter will be very thin). Fill liners about ⅔ full and bake for 15 minutes. A toothpick tester should come out clean, and an insta-thermometer should read a minimum of 200*. Allow to cool while making the frosting.

In a stand mixer with a whisk attachment, whip the cream cheese, butter, cocoa powder, and powdered sugar until fluffy. Add the vanilla and sour cream and mix 1 minute until incorporated. Frost cooled cupcakes.
