Brookies are the perfect blend of chocolate chip cookies and brownies, married into dark chocolate decadence. Inspired by the lovely Betül Tunç of Turkuaz Kitchen https://turkuazkitchen.com/recipe/brookies/
Chocolate Chip Cookie Dough:
½ cup butter, softened
½ cup brown sugar
1 egg
1 tsp vanilla
1 ¼ cups flour
¾ tsp baking powder
¼ tsp baking soda
⅛ tsp salt
1 cup chocolate chips + a handful for topping
Flaky salt
Brownie Batter:
½ cup butter
1 ½ cups dark chocolate chips
¾ cup sugar
¾ cup flour
¼ cup unsweetened cocoa powder
½ tsp baking powder
⅛ tsp salt
3 eggs
1 tsp vanilla
Preheat oven to 350*. Spray oil a 10” deep dish pie plate or a 9” square baking dish and set to one side. In a stand mixer, beat butter and brown sugar until fluffy. Add egg and vanilla and combine until well mixed. Whisk flour, baking powder, baking soda, and salt in a mixing bowl, then spoon over the dough. Top with 1 cup chocolate chips and turn mixer on low, when incorporated turn mixer off and scrape the bowl with a rubber scraper and finish mixing by hand.
In a batter bowl or other large microwave-safe bowl, melt butter and chocolate chips for 1 ½ minutes. Whisk sugar, flour, cocoa, baking powder, and salt together. Spoon over the chocolate mixture, add eggs and vanilla, then fold into the batter until just mixed.
Scrape with a rubber scraper into the prepared baking dish, then grab spoonfuls of the cookie batter and flatten a bit spreading over the brownie batter, leaving gaps in between so the brownie batter shows. Sprinkle with a few more chocolate chips and a sprinkle of flaky salt, then bake for 30-35 minutes. The outside edges will be set, and the cookie portion golden. The middle brownie portion may seem to be still a bit gooey-licious. Allow to cool for about 10 minutes before serving still warm.
