Caramelized Peach Cobbler Cake

Peaches:
8 peaches, quartered
½ cup butter, melted
¾ cup brown sugar
1 Tablespoon vanilla
Cake:
2 cups flour
1 teaspoon baking soda
½ teaspoon salt
¾ cup milk
½ cup maple syrup
1 egg
1 tablespoon vanilla
½ cup butter, melted
¼ cup cinnamon sugar
Preheat oven to 375*. Quarter and pit the peaches and lay them in a 9.13 baking dish. Sprinkle with brown sugar, butter, and vanilla. Bake for 30 minutes.
In a mixing bowl, whisk, flour, baking soda, and salt. In a batter bowl or Pyrex measurer, mix, milk, maple syrup, egg, and vanilla. Using a rubber scraper, pour the wet ingredients into the flour mixture. Then stir in the melted butter. Spread evenly over the baked peaches and sprinkle with the cinnamon sugar. Bake for another 30-35 minutes. The cake will be brown with the peaches bubbling around it.
Delicious with a scoop of ice cream.
