Cherry Chocolate Chip Blondies

½ cup butter

1 brown sugar

1 egg

1 Tbsp vanilla

1 cup flour

¼ tsp salt

1 cup cherries, pitted

1 cup dark chocolate chips


Preheat oven to 350*. Spray oil or butter an 8” square baking dish and sprinkle with cinnamon sugar, set to one side. In an 8-cup Pyrex measurer or medium-sized microwave-safe mixing bowl, melt butter and brown sugar together for 1 minute. Stir together, add the egg and vanilla, and stir again. Top with flour, salt, cherries, and chocolate chips. Fold ingredients together with a rubber scraper until combined. Spread evenly into the prepared baking dish and bake for about 30 minutes, the edges will pull away from the sides of the pan and the center will be set.
