Cherry Lime Puff Tarts

Tart cherries with luscious lime create a quick dessert with puff pastry shells, add a dollop of lime zest to whipped cream. This is a super quick dessert to make. Inspired by Ashley Manila of Baker by Nature https://bakerbynature.com/cherry-hand-pies/
3 cups cherries, pitted
¼ cup sugar
2 Tbsp cornstarch
1 lime, zested (zest divided) and juiced
1 tsp vanilla
1 pkg puff pastry shells
Lime Whipped Cream:
1 cup heavy cream
¼ cup sugar
1 tsp vanilla
In a glass measurer or other microwave-safe mixing bowl, stir pitted cherries, sugar, cornstarch, half of the lime zest (reserve the other half for whipped cream), and the lime juice together. Microwave for 3 minutes. Stir and microwave for another 3 minutes. Stir in the vanilla. Bake puff pastry shells according to package directions.
Whip the cream in a stand mixer with the sugar and vanilla. Sprinkle with about half of the reserved lime zest.
Remove the center top of the shells and stuff shells with a generous spoonful of the cherry filling. Replace the top a bit off-center and serve with a dollop of whipped cream sprinkling a bit of the lime zest over the whipped cream.
