Chewy Banana Craisin Oat Cookies

Super kitchen-sink cookies with banana, craisins, oatmeal, apple pie spice and chocolate chips; oh, and I added banana liqueur…just because I had it, totally optional.Great as a healthy treat, snack or breakfast cookie. 1 cup butter, softened

1 cup brown sugar

2 tsp vanilla

1 Tbsp banana liqueur or bourbon, optional

3 bananas, very ripe

2 eggs

2 cups flour

¾ tsp baking soda

½ tsp salt

2 tsp apple pie or pumpkin pie spice

3 cups oatmeal

1 cup bittersweet chocolate chips

1 cup craisins

Preheat oven to 350* and spray oil or line with parchment 2 rimmed baking sheets. Cream butter and brown sugar together in a stand mixer. Add vanilla, liqueur (if using), bananas and eggs. Beat 1-2 minutes until combined. Add flour, baking soda, salt, pie spice, oatmeal, chocolate chips and craisins. Mix until ingredients are just blended. Drop by teaspoonfuls or a cookie scoop onto baking sheets and bake for 8-9 minutes.
