Chocolate Almond Buttercrunch Toffee

Amazing toffee on a bed of thinly sliced almonds and a topping of bittersweet chocolate with more almond slices sprinkled on top. You’ll want to have your ingredients out and measured, equipment, etc. as this comes together quite quickly.  Inspired by David Lebovitz https://www.davidlebovitz.com/chocolatealmond/ 


2 cups almonds, thinly sliced

2 Tbsp water

½ cup butter

Salt, a pinch

1 cup sugar

¼ cup brown sugar, packed

¼ tsp baking soda

1 tsp vanilla

5 oz bittersweet chocolate chips

Fleur de sel or other flakey sea salt


Line a baking sheet with a silpat or parchment. Place a layer of about half of the almonds in a rectangle about 8.10 in the center of the baking sheet. In a medium-large heavy-bottomed pan, cook the water, butter, salt, sugar and brown sugar until a thermometer reads 300* (have the remaining ingredients measured and ready). Turn off the heat and stir in the baking soda and vanilla. Pour immediately over the almonds on the baking sheet in an even layer. Sprinkle the chocolate chips on top and wait 2 minutes, spread with a spatula into an even layer. Top with a sprinkle of fleur de sel salt and the remaining almond slices. Allow to cool completely before breaking into pieces. Store in a covered container…if it lasts that long.
