Crustless Strawberry Pie

A taste of fresh summer berries in a crustless berry pie; a bit of a cross between pie and cake. This amazing dish would be great for brunch as well. Inspired by Averie Sunshine @Averie Cooks https://www.averiecooks.com/crustless-fresh-strawberry-pie/
1 cup sugar + 2 Tbsp, divided
1 cup flour
1 tsp cinnamon
¼ tsp salt
½ lemon, zested and juiced
½ cup butter, melted
2 eggs
1 tsp vanilla
2 ¼ cups strawberries, quartered
Preheat oven to 350*. Spray oil or butter a 9” pie plate and set to one side. Whisk 1 cup sugar, flour, cinnamon, salt, and lemon zest together in a large mixing bowl. Stir lemon juice, butter, eggs, vanilla, and 2 cups strawberries into the dry mix until just combined, then spread evenly into the prepared pan. Top with ¼ cup strawberries, and sprinkle with 2 tbsp sugar. Bake for 35-40 minutes, the top will be golden brown, and a knife inserted may come out with just a few loose crumbs. Serve sliced into wedges with whipped cream or scoops of ice cream.
