Dark Chocolate and Rolo Cookies

Dark chocolate decadent cookies with caramel rolo-ing out of the middle and a pinch of fleur de sel salt on top. This is the perfect cookie! Always inspired by sweet Sally of Sally’s Baking Addiction. https://sallysbakingaddiction.com/salted-caramel-dark-chocolate-cookies/ 


½ cup butter, softened

½ cup sugar

½ cup brown sugar

1 egg

1 tsp vanilla

1 cup flour

⅔ cup unsweetened cocoa powder

1 tsp baking soda

¼ tsp salt

2 Tbsp milk

1 ½ cups dark chocolate chips

16-24 rolo’s, unwrapped

Fleur de sel, sea salt


Preheat oven to 350*. Cream the butter, sugar and brown sugar together in a stand mixer with the paddle attachment. Add in the egg and vanilla and mix until incorporated. In a medium mixing bowl, whisk the flour, baking cocoa, baking soda and salt together. Pour this over the top of the creamed butter mixture. Top with the milk and mix together until just incorporated. Pour in the chocolate chips and stir, scraping the bottom of the bowl with a rubber scraper. Scoop out with a tsp. size cookie scoop and roll into balls. Press a ball with a rolo into the middle and top with another ball, rolling back to a ball shape to seal the rolo into the middle. Flatten slightly onto a cookie sheet lined with a silpat or parchment. Sprinkle it with a bit of salt and repeat with the rest of the dough. Bake the cookies for 12 minutes. Cool a bit, but bite into one while still a bit warm for the ultimate caramel melt in your mouth delicious experience.
