Fluffernutter Pie

Fluffernutter pie starring peanut butter, marshmallows, and peanut butter cups. This recipe is quick and easy to make and soooo delicious. Inspired by Amanda Rettke of I Am Baker https://iambaker.net/fluffernutter-pie/ 

Crust:

10 oz cookies or graham crackers

¼ cup butter, melted 

Filling: 

1 cup peanut butter, divided 

6 oz mini marshmallows 

¼ cup butter 

8 oz mascarpone cheese 

Mini peanut butter cups, for garnish 

Preheat oven to 350* In a food processor, pulse cookies to crumbs, add butter and pulse until distributed. Press crumbs into a 10” tart or pie pan, pressing them evenly on the bottom and up the sides of the pan with a flat bottom cup. Bake the crust for 10 minutes. Remove from the oven and allow to cool. Spread ½ cup peanut butter over the crust. 

In a large Pyrex or other microwave-safe mixing bowl, melt marshmallows and butter together for 1 minute. Allow to cool slightly, then add mascarpone cheese and the remaining ½ cup peanut butter. Mix until combined and spread evenly over the pb layer. 

Cool completely before garnishing with peanut butter cups and slicing.
