French Apple Cake

Baked apple cake with just enough batter to hold the apples together and a crunchy sugar lid. Serve with plain cream fraiche (or sour cream barely sweetened with brown sugar). Inspired by Audrey of Pardon Your French

½ cup butter, melted  

1 cup flour

1 tsp baking powder

¼ tsp salt

2 eggs

2 tart apples (or 3 if small)

¾ cup sugar + 2 Tbsp for sprinkling

1 tsp vanilla

3 Tbsp dark rum

Preheat oven to 350*. Spray oil a 8 or 9 inch springform pan and sprinkle with a bit of cinnamon sugar. Melt butter and set to one side to cool a bit. In a small bowl, whisk the flour, baking powder and salt. Core and dice apples into about ½” chunks. In a stand mixer, whip eggs and ¾ cup sugar for 2-3 minutes or until thick, pale and a ribbon forms. Add in the vanilla, rum, apples, butter and dry flour mix. Stir until mixture is just incorporated. Pour and smooth batter into prepared baking pan and sprinkle the remaining 2 Tbsp sugar evenly on top. Bake for 45 minutes, a toothpick will come out clean.
