Idiot Cookies with Chunky Peanuts and M&M’s

These simple peanut butter gems are so delicious and easy to make. I’ve added a couple of optional add-ins that make them chunky and delicious studded with chopped salted peanuts and mini M&M’s. Uncle Stan introduced me to these when I was a kid. I asked him why they were called idiot cookies and he told me it was because they were stupid good and anyone could make em. 1 cup chunky peanut butter

 1 cup sugar

1 egg

½ cup salted peanuts, chopped

½ cup mini M&M’s


Preheat oven to 350*. Mix  peanut butter, sugar and egg in a stand mixer until fluffy and light. Add in the optional peanuts and M&M’s (if desired). Scoop into tsp sized balls onto a baking sheet. Flatten a bit with a fork and bake for 8-10 minutes.
