Lemon Mascarpone Puff Pastry with Berries

Lemon curd and mascarpone combine to top puff pastry rounds with summer berries. When pressed for time, make these amazing and quick desserts with summer berries on top and a flash of lemon zest. 4 oz mascarpone cheese, room temperature

¼ cup lemon curd homemade (link below) or from a jar

1 sheet purchased puff pastry, defrosted

1 egg, whisked

½ cup strawberries, sliced 

½ cup blueberries

lemon zest, garnish

Preheat oven to 400*. Mix mascarpone and lemon curd together until smooth and chill in the fridge. Roll pastry on a lightly floured surface. Cut out 6 rounds with a biscuit cutter 3 ¾ inches. Place on a silpat or parchment lined baking sheet. Brush the rounds with the whisked egg. Bake for about 10-12 minutes or until lightly browned on top and allow to cool. When cooled, spread with a generous mound of lemon mascarpone cream and top with fresh summer berries and some fragrant lemon zest.
