Meyer Lemon Ice Cream

Tart lemony ice cream is eggless or Philadelphia-style and really lets the citrus flavor shine. Inspired by Lori Longbotham in her Luscious Lemon Desserts Cookbook.

2 cups heavy cream

1 cup sugar

¼ cup Meyer lemon zest

⅔ cup Meyer lemon juice

Salt, a pinch

Whisk ingredients together until the sugar has dissolved. Pour into an ice cream maker and freeze according to the ice cream maker’s directions. When softly frozen, scrape into a freezer-safe container and place in the freezer to finish solidly freezing and store until ready to serve.
