Mocha-Misu Sheet Cake

A chocolate mocha sheet cake with an easy mocha mascarpone frosting. Inspired by Ashley Manila of Baker by Nature https://bakerbynature.com/chocolate-cake-with-mocha-buttercream-frosting/ 

2 cups flour

1 ½ cups sugar

½ cup brown sugar

1 cup unsweetened cocoa powder

1 ½ tsp baking soda

1 Tbsp instant espresso powder

½ tsp salt

4 eggs, at room temperature

1 cup sour cream

½ cup milk

¾ cup olive oil

1 Tbsp vanilla

1 cup coffe or hot water

Mocha Mascarpone Frosting:

8 oz mascarpone cheese, softened to room temperature

¼ cup sugar

¼ cup unsweetened cocoa powder

1 Tbsp espresso powder

1 tsp vanilla

Spray oil a 9.13 baking pan and sprinkle with cinnamon sugar. Preheat oven to 350*. In a stand mixer, whisk flour, sugar, brown sugar, cocoa powder, baking powder, and salt. Add in eggs, sour cream, milk, oil, vanilla, and coffee or water. Mix until ingredients are just incorporated. Spread evenly into the prepared pan and bake for 35 minutes or until a toothpick tester comes out batter free. Allow to cool completely before frosting. 

Beat mascarpone cheese, sugar, cocoa powder, espresso powder, and vanilla until airy and light. Spread over the cooled cake.
