Navy Cake
This moist and tender chocolate cake with a dark chocolate custard style frosting is amazing and comes from my friend Nancy who has been a navy officers wife as well as support for other navy wives, for her husband Jack’s entire career. ½ cup baking cocoa powder
2 cups flour
2 cups sugar
1 tsp salt
2 tsp baking soda
1 cup buttermilk
1 cup olive oil
2 eggs
1 cup hot water
1 tsp vanilla
Preheat oven to 350*
Mix cocoa, flour, sugar, salt & baking soda with a whisk. Add oil, buttermilk, eggs, water and vanilla. Mix till incorporated. Spray 9x13 pan with oil spray and pour in batter. Bake for 45 minutes. Make frosting the last 15 minutes of baking.
Navy Cake Frosting
1 cup sugar
3 Tbsp baking cocoa powder
2 Tbsp cornstarch
¼ tsp salt
4 Tbsp butter
1 tsp vanilla
1 cup boiling water
Mix sugar, cocoa, cornstarch & salt together in a saucepan. Add butter, vanilla and boiling water. Cook over medium heat until thick. Spread over hot cake just out of the oven, or better yet, poke the cake with the handle end of a wooden spoon before spreading the amazing custard like icing on top.
