PB Espresso Brownie Cups

Mini peanut butter cups and espresso powder star in these delectable dark chocolate brownie bites. 

½ cup butter 

8 oz dark chocolate chips 

1 cup brown sugar 

1 Tbsp espresso powder 

¼ tsp salt 

3 eggs

½ cup flour

48 mini peanut butter cups 

Preheat oven to 350*. Spray oil a mini-muffin tin and set aside. In a 2-quart Pyrex measurer or similar microwave-safe bowl, melt butter and chocolate chips in the microwave for about 1 minute. Stir until smooth. Add brown sugar, espresso powder, and salt. Stir in eggs, one at a time, until incorporated. Add flour and stir just until there are no white streaks. Spoon a scant teaspoonful of batter into the prepared mini-muffin tin. Press a mini PB cup in the center and bake for 10 minutes.
