Peanut Butter Cup Skillet Cookie

Peanut butter, chocolate chips and mini pb cups create the ultimate pizookie or skillet cookie. Would be amazing with a scoop of ice cream on top. Inspired by the amazing Sally of Sallys Baking Addiction https://sallysbakingaddiction.com/peanut-butter-skillet-cookie/ 


2 ½ cups flour

1 tsp baking soda

½ tsp salt

1 cup butter, softened

1 cup brown sugar

⅓ cup sugar

2 eggs

1 ½ cup peanut butter

2 tsp vanilla

1 cup chocolate chips

1 cup mini peanut butter cups, halved (extra for the top)

Preheat oven to 350*. In a small mixing bowl, whisk the flour, baking soda and salt. Cream the butter in a stand mixer with brown sugar and sugar. Scrape the bowl and add the eggs, peanut butter, vanilla, chocolate chips, 1 cup of the halved peanut butter cups and the flour mixture. Stir until just combined. Pour dough into a 9” or 10” cast iron skillet and smooth. Top with the extra pb cup halves. Bake for 30-35 minutes, cookie will be puffed and browned on top.
