Peanut M&M Monster Bars

Monster oat bars with peanut M&Ms and dark chocolate chips. Did I mention that they’re gluten free. Inspired by Marina at Domesticated Duchess http://domesticatedduchess.blogspot.com/2011/08/monster-cookie-bars.html 

½ cup butter, room temperature

1 cup sugar

1 cup brown sugar

1 ½ cups peanut butter

3 eggs

1 Tbsp vanilla

2 tsp baking soda

4 ½ cups oats

12 oz dark chocolate chips

12 oz peanut M&Ms

 Preheat oven to 350*. Spray a 9.13 baking pan with a bit of spray oil and sprinkle with a bit of cinnamon sugar. Set dish to one side. In a stand mixer, cream butter, sugar, brown sugar and peanut butter together for 2-3 minutes. Add eggs and vanilla to the creamy butter mixture until the eggs are incorporated. Stir in baking soda, oats, chocolate chips and M&M’s until all ingredients are well mixed. Press dough into the prepared baking dish and smooth. Bake for 15-20 minutes being careful not to overbake.
