Pear Cranberry Crisp with Crystalized Ginger

This is the taste of the season! Sweet pears, festive cranberries and warm crystalized ginger flavor this fabulous crisp with a hint of tart cranberry pieces in the oat and pecan topping. Top with a mound of cinnamon whipped cream.

3 bartlett pears

3 red pears

8 oz cranberries, ½ cup reserved for crisp topping

1 Tbsp crystallized ginger, minced fine

1 tsp cinnamon

½ tsp cardamom

½ tsp cloves

⅛ tsp salt

½ cup brown sugar

2 Tbsp cornstarch

1 tsp vanilla

Topping:

1 cup oats

½ cup butter or coconut oil, melted

1 Tbsp crystalized ginger, minced 

½ cup reserved cranberries

½ tsp cardamom

½ tsp cloves

⅛ tsp salt

2 Tbsp cornstarch

½ cup brown sugar

1 cup pecans

Preheat oven to 375*. Spray oil a 9x13 baking dish. Chop pears into a large mixing bowl, add cranberries and minced ginger. Add in spices, salt, brown sugar, cornstarch and vanilla. Mix together and spread into the prepared pan. 

Layer oats, butter or oil, minced ginger, reserved cranberries, spices, salt, pecans, brown sugar and cornstarch in a food processor. Pulse till mixture is combined and coarsely chopped. Press over the fruit layer and bake for 40 minutes. Crisp topping will be browned on top and fruit mixture will be bubbly around the edges.

Cinnamon Whipped Cream

1 cup cream

¼ cup brown sugar

½ tsp cinnamon

Beat in the mixer, cream and brown sugar to soft peaks, add the cinnamon and mix to incorporate. Spoon a large dollop on top of the warm crisp.
